Southwestern Grilled Romaine Salad

Don’t ignore the lettuce! Grilled romaine gives salads an extra layer of complexity with a nice smoky char flavor.

Creamy Avocado Dressing

  • grilled flank steak or chicken

Creamy Avocado Dressing

  1. Add all ingredients to a food processor or blender and blend until smooth. Add water for desired consistency. Set aside. (Can also be covered tightly with plastic wrap and refrigerated overnight.)

Grilled Romaine

  1. Clean and oil grill grates and heat to medium-high.
  2. In a small bowl combine olive oil and seasoning. Brush over cut side of romaine halves, taking care to coat inner leaves.
  3. Place romaine cut side down on grill grates. Grill for 3 minutes, pressing with tongs to get a good sear. Remove from grill onto platter.
  4. Add desired toppings and drizzle with dressing. Serve immediately.
