These Slow Cooker Chicken Tomatillo Tacos are so easy and perfect for the weekend. Put the chicken in after breakfast, hit the park, run some errands, and return home to a light, flavorful lunch.

  1. Place chicken breasts, onion, and sauce in slow cooker. Cook on low for 4-5 hours, or on high for 2-3 hours.
  2. Use a meat thermometer to check the inside of the chicken breasts. Once they have reached 160 degrees, use two forks to shred the chicken in the sauce.
  3. chopped onion, cilantro, sour cream, and a squeeze of lime.

    1. Hi Marc – great question! While we haven’t made this recipe in the electric pressure cooker (yet!), here’s what we would try: Add all ingredients to the cooker. Seal and set to HIGH pressure for 15 minutes. When the 15 minute cook time is up, do a natural release of pressure. Be sure to take the internal temperature of the chicken to make sure that it’s reached 165° and then use two forks to shred it in the saucy liquid. Enjoy and please let us know how it goes!
