Sheet Pan Pork Chops & Potatoes

Fancy up a meat and potatoes night with savory Mediterranean flavor. Less mess with this easy one pan recipe!

  1. Place pork in a resealable bag and drizzle 1 Tbsp olive oil to lightly coat. Add Athenian Herb Dryglaze, seal and shake for even coating. Refrigerate for 30 minutes. Remove from fridge before next steps.
  2. Place potatoes and radishes in a large bowl. In a small bowl, mix Parmesan Mediterranean Veggie Roaster with 2 Tbsp olive oil. Toss potatoes with mixture.
  3. Preheat oven to 400°F. Line a baking sheet with foil and coat with cooking spray (or use non-stick foil). Arrange potatoes and radishes, cut side down, on half of sheet. Place pork chops on other half. Cook for 20-25 minutes, flipping everything halfway. Remove when pork chops reach internal temperature of 165°F.F.
