Italian Herb Bruschetta

A beautiful appetizer… grilled ciabatta topped with a ricotta-based mixture of herbs, tomatoes & olives!

Instructions

  1. Preheat grill to medium-high heat, or use the broil setting on your oven.
  2. Drizzle bread with olive oil, then place on preheated grill or in your oven. Grill or broil until golden brown, about 2-3 min per side.
  3. In a medium bowl, combine ricotta, tomatoes, olives, basil, salt and pepper and lemon juice.
  4. Spread ricotta mixture on top of the grilled bread, sprinkle with Roma and salt and pepper to taste: garnish with basil leaves.
