A beautiful appetizer… grilled ciabatta topped with a ricotta-based mixture of herbs, tomatoes & olives!

- Preheat grill to medium-high heat, or use the broil setting on your oven.
- Drizzle bread with olive oil, then place on preheated grill or in your oven. Grill or broil until golden brown, about 2-3 min per side.
- In a medium bowl, combine ricotta, tomatoes, olives, basil, salt and pepper and lemon juice.
- Spread ricotta mixture on top of the grilled bread, sprinkle with Roma and salt and pepper to taste: garnish with basil leaves.
