Cajun Cauliflower Salad

Topped with warm, smoky roasted cauliflower, this salad is more than just a side dish; it’s a whole meal! Add all your favorite salad toppings, pile it into a big bowl, and splash it with our homemade vinaigrette. Healthful and delicious!

Instructions

  1. For Roasted Cauliflower: Preheat oven to 425°. Toss florets with olive oil and Cajun Street Seasoning to coat all over. Place florets on a foil-lined baking sheet and bake for 35-45 minutes or until fork tender and toasty brown.
  2. Toss kale and salad greens. Top with cherry tomatoes and your other favorite salad toppings. We like chopped peppers, sliced cucumber, shaved beats, chopped apple, kernel corn, nuts, and dried fruits. Serve roasted cauliflower on top with Cajun dressing.

For Cajun Dressing

  1. Whisk all ingredients together until blended. Alternatively, you could use an immersion blender or shake in a jar.
