For Single Batch:

  • 1 lb small cucumbers; sliced into spears
  • 1 cup vinegar
  • 1/2 cup sugar
  • 1 cup water
  • 1 pkg Sweet & Tangy Pickling Spice

In a medium saucepan, bring vinegar and water to a boil. Add sugar and pickling spice; stir until sugar dissolves, reduce heat and simmer for 10 minutes. Place cucumber spears in a heat-proof bowl and add mixture. Let sit for one hour at room temperature and serve, or refrigerate.

A great place to start! I added some fresh garlic gloves and fresh ginger slices to amp it up a bit. I made green beans and they were magical.

Just tried this on seedless cucumbers and cut the sugar in half (diet restrictions) and it turned out great. Would like another choice to go along with this one for pickling vegs . (Not a fan of hot spices) Maybe one with more garlic flavor would be nice.
