For Single Batch of Sweet & Spicy Moroccan Roasted Beets:
- 2 lbs beets
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp orange zest
- 1 Tbsp Sweet & Spicy Moroccan Veggie Roaster seasoning
Preheat oven to 350°F. Trim and peel beets; then cut into 1-inch pieces. Place in a single layer on a rimmed baking sheet. In small bowl, combine olive oil and seasoning. Drizzle over beets and toss to coat all sides. Roast for 35-40 minutes or until tender, turning halfway through roasting. Remove from oven and toss with balsamic vinegar and orange zest. Garnish with chopped fresh mint leaves (optional).
