For Smokin’ Chipotle Spicy Mangos:
- 5 mangos, cut into 10 wide “cheeks”
- 10 Tbsp melted butter (or cooking spray)
- 5 Tsp seasoning
To cut mango cheeks, start at the stem and cut down the wide side avoiding the hard pit. Heat grill and oil grates. Spray mango halves with cooking spray or brush with melted butter. Season generously with seasoning. Grill over indirect heat for 5 minutes on each side or until dark grill marks form. Garnish with fresh cilantro and a squeeze of lime.
Each packet makes 4-6 servings.
