To prepare, you will need:
- 6 apples
- 3/4 cup heavy cream
- 3/4 cup light corn syrup
- 1/4 cup water
- 1/2 cup (1 stick) unsalted butter
- 1 Tbsp melted butter or cooking spray, for parchment
- candy thermometer
Line a baking sheet with parchment; lightly brush parchment with melted butter or coat with cooking spray. Fit a heavy-bottomed saucepan with a candy thermometer. Insert a wooden stick into the stem of each apple, pushing halfway down into apple.
Over high heat, cook caramel mix with cream, corn syrup and unsalted butter. Stir constantly and bring to 280°F. Remove from heat and carefully stir in water. While the caramel is hot, dip and turn apples in the caramel. Sprinkle with salt. Arrange apples on parchment and let cool. Store in refrigerator. Let come to room temperature before serving.
