Mexican Chile Pumpkin Mole is a a not-so-traditional mole with cocoa and guajillo and chipotle chiles gets a touch of raisin and pumpkin sweetness.



  • 1 Tbsp olive oil
  • 2 lb boneless skinless chicken thighs (halved)
  • 1 jar Pumpkin Mole sauce
  • salt & pepper

Lightly salt and pepper both sides of chicken. In a saute pan, add oil, heat on medium heat and brown chicken on both sides. Cook for 8 minutes. Add sauce, bring to a boil. Reduce to a simmer and cook for 20 minutes. Serve with couscous or rice. Serves 4-6.


Garnish with pepitas, scallions, cilantro or golden raisins!

    I just served this last night and it was a big hit! I used chicken thighs, carrots and kale and served it over plain couscous, with cilantro, scallions, pepitas and avocado slices on the side to add. A very cozy, autumn/winter dish which was also such a breeze to make (the best part!).
