  • 1 Tbsp olive oil
  • 2 lb chicken thighs (boneless & skinless)
  • 1 jar Pumpkin Curry sauce
  • salt & pepper

Lightly salt and pepper both sides of chicken. In a saute pan, add oil, heat on medium heat and brown chicken on both sides. Cook for 8 minutes. Add sauce, bring to a boil. Reduce to a simmer and cook for 20 minutes. Serve with couscous or rice. Serves 4-6

    So easy and so delicious! I love good curry and have tried prepared sauces before, but they never tasted fresh or authentic–just strange and processed. This one is a winner. I hate to cook and generally make bad food, but this gives me one success story. I received this jar as a gift from a friend who knows I’m challenged in the kitchen. I’ll be buying plenty more jars and trying the other flavors, too!

    I can’t give a rating because I haven’t tried it. Got a lovely bottle for a gift. Label says use cubed squash and chick peas for a yummy vegetarian meal. So excited especially since it got 2 great reviews. Sadly, for me, there is chicken in the sauce. So bummed!
