For Single Batch of Parmesan Mediterranean Roasted Squash:
- 1 acorn or butternut squash
- 3 Tbsp olive oil
- 1 Tbsp melted butter
- 1 Tbsp Parmesan Mediterranean Veggie Roaster seasoning
Preheat oven to 350°F. Cut squash in half lengthwise, remove seeds, then cut into half-moon slices about 1/2-inch thick. Place in a single layer on a rimmed baking sheet. In small bowl, combine olive oil, melted butter and seasoning. Drizzle over squash slices and toss to coat all sides. Roast for 25 minutes or until tender, turning halfway through roasting.
