Dry chicken, be gone! Brining is the chef's secret to juicy meat. Our complete Nashville Hot & Spicy Chick'n Brine & Bake Kit contains our secret spicy brine blend to lock in the juice, fiery peri peri rub to flavor the meat, and a seasoned crust to add a satisfying crunch to you chicken dinner. Each bite has a tantalizing touch of spicy heat.

Includes Habanero Hot & Spicy Brine Blend, Peri Peri Style Chili Spice Blend and Crispy Crust Mixture.

YOU WILL NEED

2 quarts water
2 to 3 lb bone in chicken pieces (approx. 6-8 pieces)
1 Tablespoon of butter
2 eggs, beaten

DIRECTIONS…
BRINE
Dissolve entire packet of brine blend in a non-reactive bowl. Submerge chicken in brine solution and refrigerate 4 to 24 hours.

RUB
Remove chicken from bowl, rinse off brine and pat dry. Rub 1 Tbsp* of spice blend on all chicken pieces, set remaining blend aside.

CRUST
In a skillet, melt butter and add crust mixture. Toast until lightly browned then stir in remaining spice blend. Put seasoned crust mixture and eggs into separate shallow dishes. Dip chicken into eggs, then press chicken into crust mixture to coat all sides. Place breaded chicken on a parchment lined baking sheet.

BAKE
Preheat oven to 400°F. Bake 30 minutes, uncovered. Lower temperature to 350°F and continue baking for 20 minutes or until internal temp. of 165°F is reached. Let rest 10 minutes before serving.

*use less rub if less heat desired

FOR BONELESS CHICKEN BREASTS…
Follow recipe above with the following modifications: Brine for 4 to 8 hours. Bake at 400°F for 30 mins. or until internal temp. is 165°F.

    This is an absolutely fantastic recipe and for those that loved fried chicken like I do will be in for the treat. The brine makes the chicken very moist and the crust is the kicker. Snook Slayer approved, 2 thumbs up!

      Thanks!! Our chick’n brine & bake kits are a healthier way to get the fried chicken taste but in the oven.

    Amazing flavors. Brilliant technique for flavoring and coloring panko, so it looked great too (no anemic baked panko here). Used thighs, everyone loved them.

    If you are using smaller pieces of chicken, and therefore have more surface area to cover in panko, you will need to add some from your pantry. There will still be plenty of peri peri to go around.

    Do you discard the spicy brine blend, not to clear as spicy blend is mentioned all through the recipe . thanks.

      There is a brine blend and spice blend included in the package. The brine blend is dissolved in water and should be rinsed off the chicken after brining. The spice blend packet is then used to rub onto the chicken and mixed into the panko crust mixture.
