YOU WILL NEED…
1 1/2 lbs of lamb or boneless, skinless chicken, cut into 1 pieces
2 Tbsp olive oil
1 medium onion, chopped
1 14.5-oz can chicken broth
1 cup dried apricots, chopped
In a 12-inch skillet, heat oil over medium-high heat. Saute onions until soft. Add meat and brown on all sides. In a mixing bowl, combine broth, Tagine seasoning and apricots. Add mixture to skillet, reduce heat and simmer covered for 30 minutes. Stir occasionally.
Add salt & pepper to taste. Garnish with fresh mint. Serve over cous cous.
