YOU WILL NEED…
- 1 Tbsp olive oil
- 1 large onion, diced
- 1 lb raw ground chicken/turkey or cooked shredded chicken
- 2 (4 oz) cans green chiles
- 4 cups low sodium chicken broth
- 1 (15 oz) can cannellini beans, drained and rinsed
DIRECTIONS…
In a stock pot over medium-high heat add olive oil and onions; sauté until transparent. If using raw meat, add it now and cook until brown.
Add chiles and seasoning packet, stirring until well combined (if using cooked chicken add it now). Add chicken broth and bring to a boil. Reduce heat, cover and simmer for 30 minutes. Add beans and recover to cook for an additional 20-30 minutes.
Makes 8 1-cup servings.
