Our Blueberry Lemon Lavender Flapjack Mix is a bright, wild berry infused pancake and waffle mix that’s accented with lavender and natural lemon flavors. Just add milk, eggs, and butter to our all-natural mix; then cook, flip and serve up decadently delicious flapjacks or waffles.

Each pouch makes 12 flapjacks.



1 cup Flapjack Mix (makes 6-7, 4″ flapjacks)
1 large Egg, lightly beaten
3/4 to 1 cup Milk- for desired consistency (for waffles, use 3/4 cup milk)
1 Tbsp Unsalted Butter, melted + more for griddle
(for waffles, replace butter with 2 Tbsp Vegetable Oil)


Heat griddle to 350F and preheat oven to 175F. Preheat waffle iron and follow manufacturers instructions.

In a medium bowl, add mix. Whisk in lightly beaten egg, milk and melted butter or oil until just combined. Batter should have small to medium lumps. Do not overmix. Add milk if batter is too thick.

Grease the griddle with butter or waffle iron with oil.

Using a 4 fl oz ladle, pour flapjack batter onto the griddle. When flapjacks have bubbles on the top and are dry around the edges, about 2-1/2 minutes, flip over. Cook until bottom is golden. Repeat with remaining batter.

Keep in warmed oven until ready to serve.

I've been making this mix for years and we love it. I add freshly grated lemon zest, about a 1/2 T of dried culinary lavender and fresh blueberries when I have those things on hand to kick up the flavor, but the mix really does have great flavor as it is. I agree that they are a little more finicky in cooking- you have to have the temperature and time/per side down bc once I also had the experience like the other reviewer above of nicely browned pancakes with raw runny dough inside. So long as I pay attention to the details, these have turned out perfectly every other time. I really love this mix.

These pancakes are wonderful combination of Lemons, blueberries and a hint of lavender. It makes about 10 pancakes. You can also make biscuits with the mix. 3/4 water, 1 egg, melted butter. Roll out, cut with top of glass cup. Brush with butter. Bake at 375 for 10 min or until brown on top.
