- Tropical Shrimp & Scallops
In large skillet, melt 4 Tbsp butter over med heat. Add 2 bell peppers (thinly sliced) and saut until peppers are slightly tender. Add 1/4 cup coconut milk and 1/2 cup Tropical Mango Lime Marinade; stir well until combined. Add 2 lbs cleaned shrimp and 2 lbs cleaned sea scallops; simmer until shrimp are pink, approximately 10-15 min. Serve over Jasmine rice. Serves 6-8.
Tropical Seared Tuna Steaks Pour 2 cups Tropical Mango Lime Marinade in shallow pan. Add 4 (6-oz) tuna steaks; cover and refrigerate for 2 hours. Heat 1 Tbsp olive oil in large skillet over med-high heat. When oil is hot, place tuna steaks in pan and sear 3 min on all sides. Delicious with Mahi Mahi steaks also. Serves 4.
Tropical Chicken Wrap Spread 4 sandwich wraps with Tropical Mango Lime Marinade. Add sliced grilled chicken breast strips, roasted red pepper strips, grilled onion and a little arugula. Roll up and cut in half. Serves 4.
