Baked Feta Spread
Heat oven to 350F. Place 8-oz block of feta cheese on sheet of aluminum foil; sprinkle 2 tsp seasoning and drizzle 2 tsp olive oil. Wrap carefully & bake for 10-12 min. Cheese should be soft, not mushy. Serve with crackers or toasted bread.

Greek Chicken Pita
Combine 1/4 cup Greek yogurt, 2 t seasoning, juice from 1/2 lemon & 1 t chopped parsley. Spread mixture inside 4 warmed pitas. Fill pita with cooked and sliced chicken; top with feta cheese, lettuce, tomatoes & halved Kalamata olives.
Honey Za'atar Dressing
In a small bowl, whisk together 2 T olive oil, 2 T honey mustard, 3 T white vinegar, 2 tsp seasoning & pinch sugar.

  • Stir Marrakesh Za'atar into olive oil or melted butter to flavor veggies.
  • For grilling or roasting, use 1 Tbsp per lb of meat.
  • Combine with minced garlic and olive oil to form a paste; rub into lamb, beef, pork or chicken and grill or roast.
  • Sprinkle on oil-brushed pita bread; toast in 350F oven for about 8 minutes.
  • To add a bit of Mediterranean flavor to soups, stews & sauces, stir in 1 tsp per cup of liquid.
  • Blend into store-bought hummus and serve with pita chips or cut veggies.

Most Americans -- unless they have traveled in the Middle East (or, possibly Greece or N. Africa) -- are unlikely to be familiar with this spice.  I have tried several formulations of it, and this one from Urban Accents is by far the best I have found.  It is great on top of cream cheese or goat cheese spread on your favorite bread, or on top of humous, or can be used with oil or butter in cooking fish.  There must be some other uses for it that I haven't gotten around to trying yet, like incorporating it into a sauce or gravy.

The only use so far was to mix with olive oil and put on Naan, then put it in the oven.  Wonderful flavor!
