 6 boneless, skinless chicken thighs 2 Tbsp olive oil 1 large white onion, chopped 1 14.5-oz can diced tomatoes 1 cup chicken broth 1/4 cup raisins 2 Tbsp sugar
 In a deep skillet, heat oil over medium-high heat. Saute onions until soft. Add chicken and brown each side. Combine remaining ingredients and Mole seasoning in a bowl. Add mixture to skillet and stir to coat chicken. Reduce heat; simmer uncovered for 30 minutes, turning chicken a few times.  Add salt & pepper to taste. Garnish with sliced almonds. Serve over saffron rice. SERVES 4-6
