In a deep skillet, heat 2 Tbsp olive oil and sauté:
  • 1 chopped onion
  • 4 large boneless, skinless chicken breasts In mixing bowl, combine:
  • 1 can diced tomatoes
  • 1 cup of chicken broth
  • 1/4 cup of raisins
  • 2 Tbsp of sugar
  • Santa Fe Molé seasoning Add mixture to skillet and stir to coat chicken. Reduce heat and simmer for 30 minutes uncovered, turning chicken breasts a few times. Makes 4 servings.
