1 1/2 lbs of lamb or boneless, skinless chicken, cut into 1 pieces
2 Tbsp olive oil
1 medium onion, chopped
1 14.5-oz can chicken broth
1 cup dried apricots, chopped

prepare

In a 12-inch skillet, heat oil over medium-high heat. Saute onions until soft. Add meat and brown on all sides. In a mixing bowl, combine broth, Tagine seasoning and apricots. Add mixture to skillet, reduce heat and simmer covered for 30 minutes. Stir occasionally.

garnish

Add salt & pepper to taste. Garnish with fresh mint. Serve over cous cous.

SERVES 4-6

Easy To Cook--Exotic and Delicious To Eat February 25, 2013

I found this Urban Accents stew mix at the gift shop of the Culinary Institute of America ("CIA") in Hyde Park, New York. I figured what's good for the CIA is good for me--Boy was I right!! This is the easiest way to spice up chopped up chicken breasts with apricots. Everyone was impressed with my North African concoction! Scrumptious!

EXCELLENT!!  Prepared with skinless chicken thighs and served with couscous.  The aroma is to die for!  Cinnamon, cardamon...  a sensory treat.  The flavor is restuarant quality.  LOVE IT!!
