- Salmon with Asian Sauce
Preheat oven to 450F. Line bottom of broiler pan with foil, then oil rack pan. In small saucepan, combine 1/4 cup Chili Ginger Honey Marinade and 1/4 cup Korean Ginger Scallion Marinade; boil until glaze is reduce to 1/3 cup, about 5 min. Arrange one 2-lb center-cut salmon filet on broiler pan and pat dry. Brush salmon with glaze, reserving 1-1/2 Tbsp. Roast salmon in middle of oven for 10 min. Turn on broiler, brush salmon with glaze again, then broil 4-5 min from heat until just cooked through, about 3-5 min. Transfer to platter and brush with reserved glaze. Serves 4-6.
Chili Ginger Chicken Combine 1 cup Chili Ginger Honey Marinade and 3/4 cup soy sauce in shallow dish. Place 2 chickens (3-1/2 lbs each, quartered) skin side down into dish; cover pan with foil and refrigerate overnight. Preheat oven to 350F. Bring chicken to room temperature and place pan (still covered) in oven and roast for 30 min. Uncover pan and turn chicken over. Raise temperature to 375F and continue baking for 30 or more minutes until chicken is cooked through. Serves 6.
Chili Ginger Honey Glazed Carrots Slice 1 lb carrots (trimmed & peeled) into 1/4-inch slice. Place carrots, 1/4 cup water and 1 Tbsp butter in large skillet; cover and simmer until tender, approx 6 min. Add 6 Tbsp Chili Ginger Honey Marinade and 1 Tbsp butter. Raise heat to med-high and cook stirring constantly until all liquid is absorbed and carrots are covered with a shiny glaze. Serves 4.
Chili Roasted Sweet Potatoes Preheat oven to 350F. In large bowl, combine 3 lbs sweet potatoes (cut into quarters), 1/4 cup olive oil, 6 Tbsp Chili Ginger Honey Marinade and 3 Tbsp Thai Chili Roasted Garlic Dipping Sauce; toss thoroughly until potatoes are evenly coated. Place in roasting pan and roast (turning every 1/2 hour) until potatoes are brown and crispy on outside and fork tender. Salt & pepper to taste. Serves 6-8.
