3 lbs sweet potatoes, peeled, halved lengthwise; halves cut crosswise into ï¿½ï¿½ slices
6 Tbsp unsalted butter, melted
1 cup light brown sugarUrban Accents Yummy Yams
2 tsp grated orange zest
1-1/2 Tbsp cornstarch
Preheat oven to 375 degrees F. Heat large pot of water to boil; drop potato slices into water and cook over high heat until bright orange and knife easily pierces potato, but does not break it apart; about 4-5 min. Drain potatoes; run under cold water to stop cooking process. Turn out onto clean towel to dry. Place in buttered 13" x 9" baking dish.
In small bowl, whisk together butter, brown sugar, Yummy Yams seasoning and orange zest. Mix cornstarch with 2 Tbsp cold water in separate bowl; then whisk into butter mixture. Pour over sweet potatoes; toss well. Cover tightly with foil and bake until bubbly, about 50 min. Remove foil, stir gently and bake until liquid thickens, about 20 min longer. Cool slightly. Serve hot or at room temperature.
