Ingredients:
2 lbs new potatoes, each cut into 8 pieces
2 Tbsp
Urban Accents Chateau Provence Seasoned Salt 3/4 cup extra-virgin olive oil
1/4 cup cider vinegar
3 Tbsp Dijon mustard
1 Tbsp fresh cracked pepper
1/4 cup flat leaf parsley, chopped for garnish (optional)
Directions:
Fill a large pot with cool water and add potatoes. Bring to a boil and then reduce to simmer for 10-15 minutes, until the potatoes are fork tender. Drain and cool slightly. Meanwhile, whisk the remaining ingredients together in small bowl. Toss with the potatoes and garnish with the parsley, if desired.
