Vegetable Couscous

Accented with a spicy, African blend of cumin, cloves and fennel... deliciously different!

Ingredients:

1 cup Urban Accents Traditional Couscous
1 Tbsp extra-virgin olive oil
1 medium red onion, chopped
1 large red bell pepper, chopped
2 cups sliced zucchini
3 Tbsp Urban Accents Casablanca Ras El Hanout
1 large tomato, chopped
2/3 cup vegetable stock


Directions:

Combine couscous with 1-1/2 cups water in med saucepan and bring to a boil.  Remove from heat, cover and let stand for 5 min.  Heat large skillet and add olive oil.  Add red onion, red pepper and zucchini; saute until crisp-tender. Add Casablanca Ras El Hanout, tomato and vegetable stock. Bring to boil, cover and cook for 5 to 10 minutes. Fluff couscous and mound it on a platter; top with cooked vegetable mixture.
