Ingredients:
2 Tbsp unsalted butter
1 cup yellow onions, sliced
2 garlic clove, minced
1 medium zucchini, chopped
1/4 lb mushrooms, wiped clean and sliced
1 cup fresh Spinach
4 oz oil-packed sun-dried tomatoes, drained and chopped
3 Tbsp
Urban Accents Herbes De Provence 2 tsp
Urban Accents Tuscan Villa 1/2 tsp salt
1/4 tsp
Urban Accents Sonoma Pepper 3 large eggs
1-1/4 cups half-and-half
1/2 cup grated Gruyere (or your favorite cheese)
1/2 tsp crushed red pepper
3 oz goat cheese
1 9-inch pie crust
Directions:
Preheat oven to 375 degrees F. In a large skillet, melt the butter over medium heat. Add the onions, garlic and zucchini and cook, stirring, for 6 minutes. Then, add the mushrooms and spinach and cook, stirring, until the liquid is rendered and the vegetables are wilted. Add tomatoes, Herbes De Provence, and Tuscan Villa. Season lightly with salt and Sonoma Pepper and cook, stirring for 1 minute. Remove from heat and let cool.
In a bowl, beat the eggs and half-and-half together. Add the salt, Sonoma Pepper, grated Gruyere (or your favorite cheese), and crushed red pepper. Spoon the vegetable mixture into a pie crust, pour in the egg mixture, and crumble the goat cheese on top. Bake for 25 to 30 minutes until set. Remove from the oven and let cool for 30 minutes before serving.
