Ingredients:
1 lb small red potatoes cut into 1-inch chunks
1 lb asparagus, trimmed and cut into 1-inch pieces
2 Tbsp olive oil
1 Tbsp Urban Accents Tuscan Villa
1/2 cup grated Parmesan cheese
Directions:
Preheat oven to 400F. Place potatoes and asparagus in large bowl; add oil and Tuscan Villa and toss gently so everything is coated evenly. Bake on prepared sheet pan for 20-30 minutes. Sprinkle with Parmesan cheese; return to oven for a few minutes until cheese is lightly toasted.
