Ingredients:
2-1/2 lbs boneless, skinless chicken thighs, about 7 or 8
1/2 cup + 2 Tbsp extra-virgin olive oil
3 Tbsp
Urban Accents Tuscan Villa 1 tsp Kosher salt
1-1/2 lbs sweet Italian sausage links, cut into 2-inch pieces
24 large fresh sage leaves
6 12-inch metal skewers or wooden skewers*
Directions:
Prepare chicken thighs by trimming excess fat and cutting thighs in half. The pieces should be roughly equal in size; if the thighs are large, cut them in thirds or quarters.
In small saucepan, heat olive oil and Tuscan Villa over medium heat, stirring steadily for 3-4 minutes. Let cool to room temperature. Up to a day ahead, and at least a few hours before serving, combine the chicken, 2 Tbsp of the flavored oil and salt in a medium bowl.
Heat a gas grill to medium or prepare a medium-hot charcoal fire. Divide the remaining 1/2 cup of the flavored oil into two small bowls, one for grilling and one for serving. On each skewer, thread three pieces of sausage, three pieces of chicken, and four sage leaves. Alternate ingredients on each skewer, ending with sage leaf
Brush skewers with oil and grill skewers, covered, until 1 side is browned and has good grill marks, about 4 minutes. Flip, and cook the other side until it too has good grill marks, about 4 minutes. Brush with more oil and flip again. Continue cooking, flipping, and brushing with oil until the sausage and chicken are both cooked through (check by slicing a couple thicker pieces), about another 10 minutes. Let cool for a couple minutes, arrange on a platter, drizzle on the remaining oil, and set out for guests to serve themselves.
* Wooden skewers should be soaked in water for 30 minutes before using
