Ingredients:
1 14-oz can light coconut milk
1 cup
Urban Accents Siam Jasmine rice 1/4 cup finely diced carrots
3/4 tsp salt
1/3 cup chopped cilantro
1/3 cup sliced green onions
Directions:
In medium saucepan, bring coconut milk and 1/2 cup water to a boil. Stir in rice, carrots and salt; cook for 20 minutes or until rice is fully cooked. Gently fold in cilantro and green onions just before serving.
