Ingredients:
3 lbs small boiling potatoes, scrubbed & cut into quarters
2 Tbsp lemon juice
1/4 cup apple cider vinegar
4 Tbsp Dijon mustard
6 Tbsp olive oil
4-1/2 Tbsp Urban Accents Dillwood Grove
1 cup celery, small dice
1/4 cup red onion, finely diced
Kosher salt and pepper
Directions:
Steam potatoes for 15-20 minutes until tender but firm. Let cool. While potatoes are cooking, whisk together lemon juice, vinegar, mustard, olive oil, Dillwood Grove, 1 tsp salt and 1 tsp pepper; let mixture sit for at least 1 hour so that flavors can meld. Pace cooled potatoes, celery and onion in large bowl; pour enough dressing over mixture to moisten. Toss gently and salt and pepper to taste.
