Ingredients:
1 lb skinless, boneless chicken breast
2 Tbsp fresh-squeezed lemon juice
6 strips center-cut bacon (optional)
1/4 cup mango chutney
(mayonnaise is optional)
1/8 cup olive oil
1/8 cup balsamic vinegar
1 tsp Easy Exotic
TM Asian Five Spice Sea Salt (increase to taste)
1/4 cup finely diced red onion
2 Tbsp fresh-squeezed lime juice
1-1/2 tsp chopped capers, rinsed to remove excess brine and patted dry with paper towel or 1/4 cup thin slices of cucumber
4 oz salad greens
Directions:
Mix all the ingredients except the flank steak in a large bowl. Place the steak in a non-metallic deep dish and cover with the mixture, marinate for no more than 1 hour, or the acid in the lime juice will begin to cook the meat. Preheat grill or broiler. Remove flank steak from marinade and place on grill or broiler grate. Cook close to the heat for about 4 minutes per side or until cooked to desired doneness. Remove from heat and let stand 3-4 minutes then slice against the grain and place on a serving dish.
