Ingredients:
1lb sweet potatoes, peeled & cut into 1-inch chunks
1 19.5-oz can chickpeas, drained & rinsed
1/4 cup lemon juice
1/4 cup tahini
2 Tbsp olive oil
5 tsp Urban Accents Moroccan Road
1 garlic clove, chopped
Directions:
Place a steamer basket over a large pot of boiling water. Steam sweet potatoes for 10-12 min until tender. Place all ingredients in bowl of food processor. Puree for 1 minute; add water to thin, if necessary and puree for and additional 30 seconds. Season with salt and pepper to taste. Let cool and refrigerate in an airtight container.
Serve with crudités and pita chips.
