Ingredients:
1 rolled pork roast
1 cup sweet dried fruit (apricots, prunes, cherries, raisins, etc.)
2 Tbsp olive oil
1 cup sliced onions
2 Tbsp
Urban Accents Bayou Barbeque 1 to 1-1/2 cups red wine
Directions:
Preheat oven to 325 degrees F. Stuff dried fruit into a rolled pork roast. Coat the outside of the roast with olive oil and an ample amount of Bayou Barbeque (about 1/2 Tbsp per lb). Place in a covered oven-proof roaster along with sliced onions, and 1 cup red wine. Remove cover 30 minutes before roast is done. Roast approximately 20-25 minutes per lb or until internal thermometer reads 155 degrees. Remove roast and let rest 10 min before slicing. Deglaze pan with balance of red wine, reduce and pour over sliced meat.
