Ingredients:
6 Tbsp chicken stock
2 Tbsp extra-virgin olive oil
4 plum tomatoes, peeled and diced
1 lb string beans, trimmed
1 Tbsp
Urban Accents RomaFresh parsley, chopped
Directions:
Combine chicken stock, olive oil and tomatoes; bring to boil. Add string beans and Roma. Cover and simmer until beans are almost tender, about 5 minutes. Remove lid and simmer until excess liquid has evaporated. Add salt and pepper to taste; sprinkle with parsley.
