Ingredients:
1 med onion, chopped
2 Tbsp extra-virgin olive oil
3/4 lb zucchini, shredded coarsely
3/4 lb yellow squash, shredded coarsely

1/2 cup milk
1 cup shredded sharp cheddar cheese, divided
1/2 cup bread crumbs, divided
Directions:
Preheat oven to 325 degrees F. In large frying pan, saute onion in oil until golden. Remove from heat. Stir in zucchini, yellow squash and Fisherman's Wharf; add eggs and milk. Spray 1-1/2 quart casserole with non-stick spray. Spoon in 1/2 of mixture. Sprinkle with 1/2 of cheese and 1/2 of crumbs, repeat. Bake uncovered for 45 minutes.
