Spicy Caribbean Grilled Pineapple

Ingredients:

1 whole pineapple
1-2 Tbsp Urban Accents Cayman Citrus DRYGLAZE
Juice of one orange
Juice of zest of one lime


Directions:

Cut off top and bottom of pineapple.  Cut down the sides until all holes, spikes and spines are removed.  Lay the pineapple on its side and cut into 3/4- to 1-inch slices.  In large glass baking dish, combine orange juice, lime juice and zest and Cayman Citrus DRYGLAZE (start with 1 Tbsp, taste marinade, and work up to match your own personal "spicy" factor).  Add pineapple rings and toss gently to evenly coat pineapple.  Let pineapple marinade for 15 minutes, flipping rings over once or twice.   

Preheat grill or stovetop grill pan for medium-high heat.  Grill pineapple rings on both sides to get slightly charred grill marks.    Serve as dessert with ice cream or as an accompaniment to pork.
