First, clean the pumpkin seeds: Rinse them under cold water to remove all the pulpy strings. This is easier before the pulp dries on the seeds. Place seeds on paper towels to dry thoroughly. Now pick your favorite flavor and start snacking!
To roast: Preheat oven to 350F. Line a baking sheet with parchment paper or nonstick foil. In medium bowl: mix 1 cup of dried pumpkin seeds with desired ingredients (listed below). Spread in single layer on prepared baking sheet and roast for 15-20 minutes, stirring and turning seeds halfway through cooking time.
Herby Parmesan Toss seeds with 1 Tbsp olive oil, 1 tsp Urban Accents Tuscan Villa and 2 Tbsp grated Parmesan cheese. Halfway through roasting, toss with an additional 1/2 tsp Tuscan Villa and 2 Tbsp grated Parmesan cheese.
Curry Lime Toss seeds mixture of 1 Tbsp canola oil, 2 Tbsp fresh lime juice, 2 tsp Urban Accents Curry Row and 1/2 tsp salt. Halfway through roasting, toss seeds on baking sheet.
Maple Chipotle Toss seeds with mixture of 1 Tbsp olive oil, 2 Tbsp pure maple syrup and 2 tsp Mesa Rosa Chipotle. Toss halfway through roasting.
Spanish Toss seeds with 1 Tbsp olive oil and 1-1/2 tsp Urban Accents San Juan Sazon. Halfway through roasting, toss seeds with an additional 1-1/2 tsp San Juan Sazon.
Asian Toss seeds with mixture of 1 Tbsp olive oil, 2 Tbsp soy sauce, 2 tsp sugar and 1 Tbsp Mongolian Ginger BBQ. Toss halfway through roasting.
Maryland (mustard and paprika) Toss seeds with 1 Tbsp canola oil and 1-1/2 tsp Urban Accents Cape Cod Grill & Boil. Halfway through roasting, toss sees with an additional 1-1/2 tsp Cape Cod Grill & Boil.
Sugar & Spice Toss seeds with 3 Tbsp melted unsalted butter, 3 Tbsp sugar, 1-1/2 tsp Urban Accents Pumpkin Pie Spice and a pinch of kosher salt.
