Ingredients:
2 Tbsp extra-virgin olive oil
1 large onion, finely chopped
4-6 large Idaho potatoes, peeled and cut into 1/2" cubes
2 Tbsp
Urban Accents Pride of Prague 2 cups chicken broth
1/2 cup sour cream
Directions:
Heat oil in a large pot over medium heat. Add onion and cook until soft, about 10 minutes. Remove from heat and stir in potatoes, Pride of Prague and chicken broth. Return to heat and bring to boil. Reduce heat and continue to cook until potatoes are tender, about 15 minutes. Add in sour cream and simmer until sauce thickens, about another 2-3 minutes. For another twist on this dish, stir in 1/3 cup chopped fresh dill with sour cream.
