Ingredients:
1/2 lb fresh bay scallops
1 medium red pepper, thinly sliced
1/2 small red onion, thinly sliced
1-1/2 to 2 Tbsp
Urban Accents San Juan Sazon 1 Tbsp extra-virgin olive oil
1/4 cup cilantro leaves
Lime wedges
Directions:
Preheat broiler. Place all ingredients except cilantro in a large resealable plastic bag. Shake and massage gently to coat well. Transfer scallop mixture to a foil-lined oven tray. Broil for 5 minutes or until plump and cooked through. Stir halfway thru cooking process, but keep in single layer. Sprinkle with cilantro leaves and fresh lime juice before serving.
