Ingredients:
2-1/2 lb butternut squash, peeled & cut into 1" cubes
2 med onions, cut into 8 wedges
2 Tbsp extra-virgin olive oil
1-1/2 tsp
Urban Accents Herbes De Provence, crushed
3/4 tsp kosher salt
1/2 tsp fresh ground pepper
Directions:
Preheat oven to 425 degrees F. Place squash and onions in large bowl. Add olive oil, Herbes De Provence, Mediterranean Sea Salt and pepper; toss well to coat evenly. Pour out into shallow pan. Roast for 30 minutes or until squash is tender and slightly browned; stir halfway through cooking time.
