Ingredients:
3 lbs sweet potatoes, peeled & cut into 1-inch cubes
3 Tbsp extra-virgin olive oil
3 Tbsp
Urban Accents Mumbai Honey Pepper Dryglaze3-4 Tbsp unsalted butter, melted
Directions:
Toss sweet potatoes with olive oil in large bowl; sprinkle with Mumbai Honey Pepper Dryglaze and toss again. Let potatoes sit for 15 minutes to soak up flavor.
Preheat oven to 400F. Arrange cubes in single layer on rimmed baking sheet. Roast potatoes, stirring occasionally, for 25-30 minutes until tender and edges of potatoes cubes have started to crisp. Place roasted potatoes in large bowl. Drizzle with melted butter to taste and mash, leaving some potatoes in small chunks.
