Ingredients:
2 chicken thighs
4 garlic cloves, minced
4 tbsp Urban Accents Parisian Melange
Salt and pepper to taste
1/4 tsp brown sugar
1/2 tsp fresh thyme (or any fresh herb on hand)
handful of fingerling potatoes
4 Tbsp olive oil, divided
1/2 pint cherry tomatoes
Directions:
Combine garlic, Parisian Melange, salt, pepper, brown sugar, and herbs. Rub over chicken thighs and marinate in the fridge for 4 hours. Preheat oven to 400F and arrange the chicken thighs on a roasting pan, embedding the potatoes around the chicken. Drizzle potatoes with 2 Tbsp olive oil. Roast for 30 minutes. Add the cherry tomatoes and drizzle the remaining olive oil over everything. Roast until the tomatoes are soft and the chicken is nicely browned, approximately 8 to 10 more minutes and internal temperature has reached 165. Serve hot and drizzle any of the juices in the roasting pan over the chicken.
