Ingredients:
1 cup cooked and cooled
Urban Accents Raj Baby Basmati Rice 1 15-oz can black beans, rinsed
1/2 cup red bell pepper, chopped
2-3 Tbsp balsamic vinegar
1/4-1/3 cup extra-virgin olive oil
1 garlic clove, finely minced
2 Tbsp
Urban Accents Rio Grande Chili Blend 1/4 cup chopped cilantro
Directions:
Mix the first three ingredients together in a medium sized bowl. In a small bowl, whisk the remaining ingredients together and pour over the bean mixture. Chill for 1 hour to overnight before serving.
