Red Chili

Originating in New Mexico,  this smoky chili is for meat-lovers...no beans allowed!

Ingredients:

2 Tbsp extra-virgin olive oil
3 large white onions, coarsely chopped
3 garlic cloves, finely chopped
3 lbs coarsely ground, lean beef
3/4 cup Urban Accents Rio Grande Chili Blend
3 cups tomato juice

Directions:

In a 4-quart Dutch oven or heavy pot, heat oil. Add onion and garlic, and cook until soft. Add beef and Rio Grande Chili Blend and cook until meat is evenly browned, breaking any lumps with fork. Add tomato juice, bring to a boil; and reduce heat. Simmer uncovered 2-3 hours, stirring occasionally, until meat is very tender and flavors are fully blended. Add additional tomato juice is chili becomes too thick..
