Ingredients:
4 eggs
1 cup sugar
1 cup canned pumpkin
1 Tbsp + 1/4 tsp Urban Accents Pumpkin Pie Spice
1 Tbsp + 1 tsp vanilla extract, divided
7 cups challah, French or Italian bread cubes
1 cup flaked coconut
1 cup chopped pecans
1 cup maple syrup
Directions:
Preheat oven to 350F. Mix eggs, sugar, pumpkin, 1 Tbsp Pumpkin Pie Spice and 1 Tbsp vanilla in large bowl with whisk until well blended. Stir in milk until well blended. Add bread cubes and toss to coat well. Pour into greased 13x9-inch baking dish. Sprinkle evenly with coconut and pecans.
Bake 35-40 minutes or until knife inserted in center comes out clean. Cool slightly on wire rack. In microwave-safe container, combine maple syrup, 1/4 tsp Pumpkin Pie Spice and 1 tsp vanilla extract. Microwave on HIGH for 1 minute or until warm, stirring once.
Serve squares of bread pudding drizzled with the spiced maple syrup.
