Ingredients:
3 Tbsp butter
1 cup finely chopped onion
2 tsp Urban Accents Pumpkin Pie Spice
1 tsp ground ginger
1 15-oz can pumpkin
1 cup chunky applesauce
3-1/2 cups chicken broth
3/4 cup heavy cream
Directions:
Melt butter in large saucepan over med heat. Add onion; cook and stir 5 min or until softened. Stir in Pumpkin Pie Spice and ginger. Stir in pumpkin, applesauce and broth until well blended and smooth. Bring to boil, stirring occasionally. Reduce heat to low and simmer 5 min. Remove from heat. Using and immersion blend, carefully blend soup until smooth. Stir in cream and heat gently before serving.
