Ingredients:
1/2 cup purchased pesto
1/4 cup mayonnaise
4 portabella mushrooms, stems removed and dark gills scraped out
Extra-virgin olive oil
Urban Accents Steakhouse Burger BlendJarred roasted red peppers, drained
Arugula
4 slices provolone cheese
4 whole grain rolls
Directions:
In small bowl, combine pesto and mayonnaise; salt and pepper to taste and set aside. Preheat grill to medium-high heat; oil grate with non-stick spray or olive oil. Grill rolls, cut side down, until lightly toasted and transfer to plate.
Brush mushrooms with oil on both sides; sprinkle with Steakhouse Burger Blend. Grill, rounded side up for 4 minutes. Turn mushrooms over; cover and grill until mushrooms are tender, about 4 minutes more.
Spread grilled bottom of rolls with pesto mayonnaise. Place one mushroom on each bottom; top with red pepper pieces, provolone cheese and arugula. Place roll tops over and serve.
