Pineapple Rice
Accented with lemongrass, sweet pineapple and crunchy toasted cashews.

1 cup Urban Accents Siam Jasmine Rice
1-1/2 cups chicken or vegetable stock
1 cup pineapple juice
1 lemongrass stalk
3 Tbsp extra-virgin olive oil
1 onion, finely chopped
1 clove garlic, minced
1 red bell pepper, seeded and diced
3/4 cup cashews, extra for garnish
1/2 pineapple, cubed
Salt & pepper to taste
Scallions, green part only, for garnish


In medium saucepan, heat stock, pineapple juice and lemongrass over high heat to infuse. While liquid is infusing, heat oil in another medium saucepan; saute onion and garlic until translucent.  Add red pepper and saute until soft. Add rice to pan and stir to coat with onion, garlic and pepper. Add the liquid / lemongrass mixture and a pinch of salt. Bring the mixture to a boil and lower heat to a simmer. Cover and simmer until rice is tender, about 10-12 minutes. While rice is cooking, cook the cashews in a nonstick pan over high heat and "dry fry" until golden brown. Remove immediately once they begin to color. Once rice is cooked, remove lemongrass stalk; add the cashews and pineapple. Salt and pepper to taste. Garnish with crushed cashews and chopped scallions and enjoy..
