Ingredients:
Dressing:
4 garlic cloves, mashed
1/2 cup oil-packed sun-dried tomatoes, finely chopped
1/4 cup basil, finely chopped
3/4 cup red wine vinegar
1 cup extra-virgin olive oil
1/2 cup
Urban Accents Sonoma Pepper 2 Tbsp extra-virgin olive oil
2 garlic cloves, mashed
4 halibut fillets, cut into 1-inch by 4-inch strips (or any white fish)
1-1/2 lbs mixed salad greens
Directions:
In small bowl, whisk together dressing ingredients; set aside. Divide greens between 4 plates. Pour Sonoma Pepper into shallow bowl. In large non-stick skillet, add oil and mashed garlic; heat to low-medium heat. Dredge fillets in Sonoma Pepper. Cook fish strips 2-3 minutes on each side until done. Place fillets on greens and top with desired amount of dressing. Refrigerate remaining dressing for future salads.
