Panzanella Salad



Delicious main dish salad with Italian sausage yum!!!

Ingredients:

3 Tbsp olive oil
1 loaf stale French bread, cut into 1-inch cubes
1 tsp kosher salt
1/2 lb Italian sausage, crumbled
2 large tomatoes, chopped
1/2 cucumber, chopped
1 yellow pepper, chopped
1/4 cup chopped basil
Mozzarella cheese, cut into small pieces
Vinaigrette:
3 Tbsp white wine vinegar
1/2 cup olive oil
1 garlic clove, minced
1 tsp kosher salt
1 tsp Dijon mustard
2 tsp Urban Accents Roma
1/2 tsp black pepper



Directions:

In a large skillet, heat the olive oil over med heat; add bread and salt.  Heat until bread is fragrant and golden, tossing often; add more oil if needed.  Meanwhile, in a separate skillet brown the sausage over med heat; then drain.  In a large bowl, combine the tomato, cucumber, pepper, basil, and cheese.  Stir in the bread and Italian sausage.  In a small bowl, whisk together all ingredients for vinaigrette until completely combined.  Pour over salad and serve.
